John Collins


A cocktail whose origin can be traced to the real John Collins who was headwaiter at a hotel and coffeehouse named Limner’s circa 1790-1817. In The Speakeasies of 1932 this is the drink recommended by Manny head bartender at the Strollers, a speakeasy at 67 E. 59th St. in New York City.

  • Juice of one lemon
  • 2 teaspoons full of sugar
  • One glass of gin
  • Club soda

Preparation Put three or four lumps of ice in a large tumbler, juice of one lemon, 2 teaspoons full of sugar, one glass of gin. Fill balance with soda water and stir well.
